Zucchini slice Lorraine

Ingredients

  • 2 tsp extra virgin olive oil;
  • 150 g bacon, coarsely chopped;
  • 1 brown onion, finely chopped;
  • 4 eggs;
  • 50 g flour;
  • ¼ tsp baking soda;
  • 125ml thickened cream;
  • 2 (about 300 g) zucchini, trimmed, coarsely grated;
  • 100 g coarsely grated Swiss-style cheese

Directions

  1. Preheat oven to 200°C/180°C fan forced. Grease a 20 cm square pan. Line with baking paper;
  2. Heat the oil in a small frying pan over high heat. Add the bacon and cook, stirring often, for 5 minutes or until starting to turn golden;
  3. Add the onion and cook, stirring often another 5 minutes or until the bacon is crisp and the onion is soft. Set aside to cool slightly;
  4. Use a fork to whisk the eggs in a large bowl until combined. Add the flour and soda. Stir until smooth;
  5. Whisk in the cream. Add the zucchini, cheese, and bacon mixture. Season with pepper. Stir to combine;
  6. Pour the mixture into the prepared pan and bake for 25 minutes until the slice is set and the top is golden;
  7. Slice into 12 pieces to serve and serve with Special Mayo-Ketchup Sauce.
