Vegan Meatball Soup

Ingredients

  • 100 g of fine oatmeal;
  • 4 tbsp. chickpea flour;
  • 50 g of rice;
  • 1 potato or a small head of celery
  • 1 carrot;
  • 1 bunch parsley;
  • 2-3 stalks of green onions;
  • 2-3 tbsp. olive oil;
  • 2-3 tbsp breadcrumbs;
  • salt, black pepper and paprika to taste

Directions

  1. Prepare "minced meat" with the flour, oats, 1 dices onion, salt and pepper and a little water. Then form the balls;
  2. Preheat some olive oil in a pan;
  3. Roll each ball in breadcrumbs and fry the balls for few minutes;
  4. Stew the finely chopped vegetables in olive oil (use the obe from frying the balls), salt, spices and a little water;
  5. When they are soft, add a liter of water and boil and add the balls;
  6. Let them simmer over medium heat for 20-25 minutes;
  7. Serve with fresh parsley and / or hot paprika if desired.
