Vegan Easter bread with chocolate
Ingredients
- 250 ml almond milk
- 50 g brown sugar
- 1 tbsp instant yeast
- vanilla extract;
- 1 lemon zest, grated
- 55 g vegan butter, melted
- 1 tbsp baking powder
- 3 cup + 1/4 cup flour
- 120 g dark chocolate
- 50 g slivered almonds
- 50 g raisins
Directions
- In a suitable container mix warm almond milk, 1 tbsp of sugar and yeast;
- Let them rest until foamy;
- In another container, mix the melted butter and baking powder;
- In a large bowl, sift 3 cups of flour, add the remaining sugar, the grated lemon zest and mix well;
- Add the oily and milky mixtures to it, mix well and knead the dough. Knead for 5-8 minutes;
- Cover the dough and let it rest for 1 hour;
- Meanwhile, melt the chocolate until smooth;
- Sprinkle the remaining flour on the kneading table and spread the dough to a 2-inch thick sheet;
- Spread the melted chocolate all over it and sprinkle with almonds and raisins;
- Form a roll, cut it in half longitudinally and knit the halves. Put it in a baking form and brush with almond milk on top;
- Let it rest for another 45 minutes and bake at 360℉ ℃ for 35 minutes.
