Vegan Easter bread with chocolate

Ingredients

  • 250 ml almond milk
  • 50 g brown sugar
  • 1 tbsp instant yeast
  • vanilla extract;
  • 1 lemon zest, grated
  • 55 g vegan butter, melted
  • 1 tbsp baking powder
  • 3 cup + 1/4 cup flour
  • 120 g dark chocolate
  • 50 g slivered almonds
  • 50 g raisins

Directions

  1. In a suitable container mix warm almond milk, 1 tbsp of sugar and yeast;
  2. Let them rest until foamy;
  3. In another container, mix the melted butter and baking powder;
  4. In a large bowl, sift 3 cups of flour, add the remaining sugar, the grated lemon zest and mix well;
  5. Add the oily and milky mixtures to it, mix well and knead the dough. Knead for 5-8 minutes;
  6. Cover the dough and let it rest for 1 hour;
  7. Meanwhile, melt the chocolate until smooth;
  8. Sprinkle the remaining flour on the kneading table and spread the dough to a 2-inch thick sheet;
  9. Spread the melted chocolate all over it and sprinkle with almonds and raisins;
  10. Form a roll, cut it in half longitudinally and knit the halves. Put it in a baking form and brush with almond milk on top;
  11. Let it rest for another 45 minutes and bake at 360℉ ℃ for 35 minutes.
