Tarte aux Tomates

Ingredients

  • 2 tsp flour;
  • ⅔ cup olive oil or melted butter;
  • 3 tsp salt;
  • 1 tsp pepper;
  • ½ cup water;
  • 2 tbsp. Dijon mustard;
  • 4 tbsp. tomato paste;
  • 1 kg of fresh tomatoes;
  • 1 tbsp. Provencal spices (savory, marjoram, rosemary, thyme and oregano);
  • 5 tbsp. breadcrumbs

Directions

  1. Knead the dough with flour, 1 tsp. salt, water and ½ tsp. olive oil and let it rest;
  2. Wash and slice the tomatoes (5 mm thick);
  3. Roll out the dough into a crust 5 mm thick. Sprinkle some flour to avoid sticking;
  4. In a greased tart pan, spread the crust and raise at the corners;
  5. Punch the crest with a fork evenly to avoid it rise;
  6. Spread the mustard on the crust;
  7. Spread the tomato puree over the mustard;
  8. Sprinkle breadcrumbs evenly on top;
  9. Arrange the tomato slices on top of the breadcrumbs;
  10. Sprinkle olive oil, salt and spices on everything;
  11. Bake at 400℉ for about 35 minutes;
  12. Serve warm.

Notes

Alternatively, the tart can be prepared with a sheet of puff pastry.
