Ingredients
2 tsp flour;
⅔ cup olive oil or melted butter;
3 tsp salt;
1 tsp pepper;
½ cup water;
2 tbsp.
Dijon mustard
;
4 tbsp. tomato paste;
1 kg of fresh tomatoes;
1 tbsp. Provencal spices (savory, marjoram, rosemary, thyme and oregano);
5 tbsp. breadcrumbs
Directions
Knead the dough with flour, 1 tsp. salt, water and ½ tsp. olive oil and let it rest;
Wash and slice the tomatoes (5 mm thick);
Roll out the dough into a crust 5 mm thick. Sprinkle some flour to avoid sticking;
In a greased tart pan, spread the crust and raise at the corners;
Punch the crest with a fork evenly to avoid it rise;
Spread the mustard on the crust;
Spread the tomato puree over the mustard;
Sprinkle breadcrumbs evenly on top;
Arrange the tomato slices on top of the breadcrumbs;
Sprinkle olive oil, salt and spices on everything;
Bake at 400℉ for about 35 minutes;
Serve warm.
Notes
Alternatively, the tart can be prepared with a sheet of puff pastry.
