Summer just got even tastier with this blissful deliciousness that gives a new sense of pleasure.

Ingredients

  • 3-4 fresh tomatoes;
  • 1 large cucumber;
  • 1 fresh pepper;
  • 5-10 olives;
  • 1 head of red onion;
  • 100 g cooked red quinoa;
  • 2 tbsp. vegan parmesan;
  • 5-6 leaves of fresh basil;
  • 2-3 tbsp. olive oil, cold-pressed;
  • 1 tbsp. balsamic vinegar

Directions

  1. Rinse and cut the tomatoes, pepper, cucumber, basil, and onion and put them in a deep bowl;
  2. Fluff the cooked quinoa with a fork so it doesn't stick and add it to the veggies;
  3. Sprinkle with the spices and gently stir with a large spoon to coat the quinoa seeds around the tomatoes;
  4. Add olives and serve.
