Spring garlic and tomato risotto

Ingredients

  • 300 g brown rice;
  • small onions;
  • 300 g cherry tomatoes;
  • 50 ml white wine;
  • a pinch of saffron;
  • 3 tbsp olive oil;
  • 1 tsp salt;
  • 1 tsp dry ground thyme;
  • green leaves of 5-6 sticks spring garlic;
  • 1 l water

Directions

  1. Chop onions and stew with wine and olive oil;
  2. When the onions soften, add the saffron, salt 1l of boiling water and the washed rice;
  3. When it boils, reduce heat and let it simmer covered;
  4. Chop the garlic leaves and slice the tomatoes
  5. Just before the end add tomatoes, thyme, garlic and stir.
