Soupe du Festival de Cannes
Ingredients
- 1½ kg zucchini;
- 1½ l water;
- 100 g carrots;
- 1 onion;
- 1 garlic;
- 2 tbsp tahini;
- 4 tbsp olive oil;
- Pepper and salt to taste.
Directions
- Rinse and prepare the veggies — skin the onion and the garlic. Chop everything in large lumps;
- Place the veggies in a pot and add 1 tsp of salt and water barely covering them. Bring to a boil and let them simmer until tender (20-30 minutes). Minutes before that add the olive oil;
- Remove from the heat, add tahini and pepper, and using an immersive blender, process everything to a smooth cream;
- Serve hot with a toasted French baguette with butter and cheese.
