Soupe du Festival de Cannes

Ingredients

  • 1½ kg zucchini;
  • 1½ l water;
  • 100 g carrots;
  • 1 onion;
  • 1 garlic;
  • 2 tbsp tahini;
  • 4 tbsp olive oil;
  • Pepper and salt to taste.

Directions

  1. Rinse and prepare the veggies — skin the onion and the garlic. Chop everything in large lumps;
  2. Place the veggies in a pot and add 1 tsp of salt and water barely covering them. Bring to a boil and let them simmer until tender (20-30 minutes). Minutes before that add the olive oil;
  3. Remove from the heat, add tahini and pepper, and using an immersive blender, process everything to a smooth cream;
  4. Serve hot with a toasted French baguette with butter and cheese.
