Second-Chance “Fried” Rice

Ingredients

  • ¼ cup soy sauce;
  • 3 tbsp tahini;
  • 1½ tbsp vinegar;
  • 1½ tsp red pepper;
  • 3 cups leftover cooked rice;
  • 2 cups diced vegetables (onion, carrot, broccoli, cauliflower, peas, corn, bell pepper);
  • ½ cup almonds (optional)

Directions

  1. Preheat the oven to 190℃, and line a baking paper on a tray;
  2. In a bowl, combine the soy sauce, tahini, vinegar, and red pepper. Add the leftover rice and diced vegetables and toss until evenly coated in the sauce mixture;
  3. Arrange in a single layer on the tray. Roast until the rice is slightly crispy and the vegetables are cooked, tossing halfway through (30 minutes). Add the almonds to the tray 10 minutes before the dish is cooked completely.
