Salty Ricotta Cream with Spices (Ricotta salata spalmabile)

What goes well with:

  • spread on toasted bread or ciabatta;
  • as a dip for raw vegetables (carrots, cucumbers, peppers);
  • as a garnish for roasted vegetables or potatoes;
  • for stuffing tomatoes, peppers or zucchini

Ingredients

  • 200 g fresh ricotta;
  • 2 tbsp olive oil;
  • 2 tbsp finely chopped fresh herbs (dill, parsley, basil, chives, mint — optional);
  • 2 tbsp Greek yogurt;
  • 1 small clove garlic;
  • ¼ tsp salt;
  • 1 pinch freshly ground black pepper;
  • zest of ½ lemon (grated) or a few drops of lemon juice.

Directions

  1. Prepare the spices (finely chop), lemon (grated zest) and garlic (clean and press);
  2. In a bowl, place the ricotta and yogurt and whisk until fluffy and light;
  3. Add the olive oil, spices, garlic, salt, pepper and lemon zest. Mix carefully;
  4. Add salt/acid if necessary;
  5. Serve in a small bowl, garnished with a bit more of olive oil on top;
  6. Store in a box, in the refrigerator for up to 3 days.
