Ingredients
- 1 kg of potatoes;
- 250 g flour;
- 1 egg;
- 1 onion;
- 200 g white cheese;
- 100 g grated yellow cheese (optional);
- 1 tsp salt;
- 3 tbsp olive oil;
- 1 tsp baking powder;
- 2 tbsp mint
Directions
- Boil potatoes for 30 minutes;
- Preheat oven to 420 ℉
- Mash the potatoes and add the rest of the ingredients to them;
- Knead well to non-sticky dough;
- Roll out the dough on a sheet ½ in. thick;
- Bake in a pan or on a baking paper until golden brown;
- Serve warm with yogurt (optional)
Notes
- To save time boiling the potatoes, cut their skin at the equator. When cooked, put them in cold water and you could pill skin off easily;
- Optionally, you can add bacon or ham to the dough;
- If you like the vegan and gluten-free option, skip cheese and eggs;
- An even faster option is to grate the raw potatoes in the beginning and take it from step 2.
