Ingredients

  • 1 kg of potatoes;
  • 250 g flour;
  • 1 egg;
  • 1 onion;
  • 200 g white cheese;
  • 100 g grated yellow cheese (optional);
  • 1 tsp salt;
  • 3 tbsp olive oil;
  • 1 tsp baking powder;
  • 2 tbsp mint

Directions

  1. Boil potatoes for 30 minutes;
  2. Preheat oven to 420 ℉
  3. Mash the potatoes and add the rest of the ingredients to them;
  4. Knead well to non-sticky dough;
  5. Roll out the dough on a sheet ½ in. thick;
  6. Bake in a pan or on a baking paper until golden brown;
  7. Serve warm with yogurt (optional)

Notes

  • To save time boiling the potatoes, cut their skin at the equator. When cooked, put them in cold water and you could pill skin off easily;
  • Optionally, you can add bacon or ham to the dough;
  • If you like the vegan and gluten-free option, skip cheese and eggs;
  • An even faster option is to grate the raw potatoes in the beginning and take it from step 2.
