Quick Chia & Strawberry Jam

Besides being one of the super nutritious superseeds, full of fiber and protein, chia absorbs fluid and then becomes jelly-like. Therefore, it is the perfect trick for an easy and healthy jam, avoiding the normal process of making jam or marmalade, which usually requires a lot of sugar, pectin and boiling to thicken. Apart from being a healthier trick, it is also much easier than making traditional jam and takes only 10 minutes from start to finish. For sweetening, use honey, maple syrup or agave, not plain granulated white sugar.

Ingredients

  • 2 cups raspberries, strawberries or blackberries
  • 2 tbsp. honey
  • 2 tbsp. chia seeds

Directions

  1. Wash the fruits well and cut it two or four;
  2. In a small saucepan, cook the fruits over medium heat until shredded;
  3. Carefully mash the fruits in the saucepan and remove from the heat;
  4. Add in honey (or other sweetener) while stirring to dissolve;
  5. Pour chia seeds and stir gently to mix for about 5 minutes to thicken;
  6. Allow it to cool and transfer to a glass jar;
  7. Store in the refrigerator.

Notes

This jam will thicken well, but will not be as sticky as the one you buy at the store. If you like to use more juicy fruits or if you want a thicker jam, add some white lemon pulp (just under the zest). The pulp has a lot of naturally occurring pectin, but too much of the lemon peel may dominate the other flavors in the jam.
