Ingredients
- 2 cups flour;
- ½ cup olive oil or melted butter;
- 1 tsp. salt;
- ½ cup water;
- 3 eggs;
- 150 g cheese;
- 1 tbsp. sour cream;
- 4 sticks leek;
- 50 ml white wine;
- dry basil or savory to taste.
Directions
- Make dough with flour, ½ tsp. salt, ½ cup of water and ½ cup of olive oil and let it rest;
- Chop the leek and steam it with 1-2 tbsp. olive oil, salt, spices to taste and 50 ml water or white wine;
- Roll the dough and form a crust ¼ inch thick. Sprinkle some flour onto the board and the dough for this;
- Greese the bottom and the sides of a quiche pan;
- Spread the crust on the bottom of the pan and form a board;
- Punch the crust with a fork evenly across the entire surface to prevent it from inflating;
- On top of it place the leek and shredded cheese;
- Whipped the eggs and the cream and cover the quiche;
- Bake in a preheated oven at 400℉ until it turns golden brown (30-45 minutes);
- Serve with some siding of sour cream or full-fat yogurt.
Notes
- Instead of leek, alternatively, use onion, mushrooms, spinach, etc. (or combination of them as much as 8 oz cooked), slightly steamed as above;
- A non-vegetarian option (and much prefered in Burgundy) is to use fried beacon in red wine with some Herbes de Provence.
