Pumpkin Velvet with Crotones

1 medium pumpkin (c. 10 lb.) can provide you with one good-tasting dish and one wonderful dessert

Ingredients

  • ½ medium pumpkin (5 lb.)
  • 1 onion
  • ½ garlic head
  • 1 in. ginger root
  • 1 dry pepper
  • 2 tbsp. olive oil
  • 3 tsp. sea salt
  • 1 tsp. turmeric
  • ½ tsp. curry
  • ½ tsp. cumin
  • 1-2 cup pumpkin seeds if our pumpkin's are not good
  • water

Directions

The Soup

  1. Prepare the pumpkin and remove the seeds. If they are in good condition for roasting wash them properly and let them wait;
  2. Cut and peel the punkin and put the pieces in a pot;
  3. Pour water and bring to boil;
  4. Peel and chop the onion and the ginger and out of them in the pod;
  5. Let it simmer at medium heat with 1 tbsp salt and olive oil;
  6. Add the condiments in 20-25 minutes. Stir and lower the heat to minimum;
  7. Take off the heat in 10 minutes and process to a velvet cream

The croutons

  1. Heat the seeds and 2 tbsp. salt in a suitable pan;
  2. Stir periodically until the desired aroma and color is obtained

Serve the soup sprinkled with crouton-seeds
