Pork with Peas

Ingredients

  • 1¼ kg boneless pork;
  • 600 g peas (frozen or canned);
  • 200 g baby carrots (frozen or canned);
  • 1 onion;
  • 3-4 cloves garlic;
  • 1 can chopped tomatoes;
  • 75 g lard;
  • 2 tsp red paprika powder;
  • ½ tsp black pepper;
  • 1-2 tsp salt

Directions

  1. Finely chop the onion, garlic and cut the meat into bite-sized pieces;
  2. Open the cans and sauté the onion with 100 ml of pea broth. Add salt;
  3. Add the meat in portions and continue stirring. When you have added all the meat, add more broth and/or water, just enough to lightly cover the meat;
  4. Reduce the heat to medium and let the meat simmer (30 minutes);
  5. Add the peas, and carrots, stir, and increase the heat to high;
  6. When it boils, add the spices, garlic and tomatoes. Stir and reduce the heat to simmer until the dish is fully cooked (5-10 minutes);
  7. Serve hot, on deep plates, with some of the sauce, if desired.
