Peach Homemade Ice Cream

Just-ripe or slightly under-ripe bananas work best here.

Ingredients

  • 2 Bananas;
  • 4 Dates;
  • 1⁄4 cup Cashews;
  • 4 peaches;
  • 2 tbsp coconut flakes, optional

Directions

  1. Peel the bananas, cut them into chunks, put them into a plastic bag, and place them in the freezer overnight;
  2. Soak the dates and cashews in water for a few minutes, making sure all the pits are removed from the dates;
  3. Peel the peaches and cut them into pieces that your blender can handle;
  4. Drain the water from the dates and cashews, add the banana slices, dates, cashews, and peaches to the blender, and blend until it’s creamy;
  5. Eat immediately or put in the freezer for a few minutes to chill before serving;
  6. Sprinkle with coconut flakes, if desired.

Notes

Alternatively:

  • Replace the nuts with ready-made cashew butter;
  • Use another flavourful fruit like 2 mangoes, a small melon, etc.
