Pea & Leek Cream Soup

There's hardly anything more annoying than catching a cold when the spring comes and the blossom aroma outside is beyond your senses. Here is a nice pea cream soup that may gracefully speed up your recovery with its abundance of leeks, garlic, and thyme.

Ingredients

  • leaves from a bunch of leeks (be generous);
  • 900 g powder (frozen or fresh);
  • 2 heads of garlic;
  • 3 tbsp. olive oil;
  • 2 tbsp. cashew butter;
  • salt, pepper, thyme, and mint to taste.

Directions

  1. Clean and rinse 1 bunch of leeks. Separate the lower half for another dish, and use the upper one (the green leaves);
  2. In a saucepan pour the feathers with 2 liters of water and bring to boil;
  3. Add 1 tsp. sea salt, olive oil, and peas;
  4. Reduce heat to medium-high and simmer for 15-20 minutes;
  5. Meanwhile, peel the garlic and add the whole cloves with the spices. Reduce heat to medium and leave for another 5-10 minutes;
  6. Add cashew butter and process until smooth;
  7. Garnish with mint and vegan cheese and serve with breadsticks or croutons if desired.

Notes

Alternatively:

If you're not vegan, use full cream instead of cashew butter
