Mushroom Risotto

Emperor's rice is a black, wholegrain, long-grained, gluten-free rice. It has an irresistible exotic fragrance and taste. After boiling, it becomes dark-purple, it obtains a slight walnut taste and the grains retain their shape

Ingredients

  • 1 cup Imperial rice;
  • 1 onion;
  • 250 g mushrooms by choice;
  • 100 ml white wine;
  • 2 tbsp Olive oil;
  • salt to taste;
  • 1 tsp. Dry ground basil;
  • ½ tsp. Turmeric
  • ½ tsp. Sweet curry

Directions

  1. Chop onions and stew with wine and olive oil;
  2. Chop the mushrooms into strips;
  3. When the onions soften, add the mushrooms;
  4. Stir and allow to stew, then add 500 ml of boiling water and salt;
  5. Add the washed rice now and stir;
  6. When it boils, reduce heat and let it simmer covered;
  7. 10 minutes before the end add the spices and mix;

Notes

Instead of dry onions and/or basil, use fresh when available
