Minted Lemon/Lime Watermelon Agua Fresca

Ingredients

  • 250 ml water;
  • 1 tbsp dried stevia leaves;
  • 1 handful coarsely chopped fresh mint leaves (50 g);
  • 1 lemon;
  • 2 limes;
  • 1 medium watermelon (2-3 kg), seedless;
  • Ice cubes.

Directions

  1. Cool the watermelon for a few hours in the refrigerator;
  2. In a small saucepan, combine water and stevia and bring to a boil, remove from heat, cover, and set aside for 10-15 minutes (to cool to 70-80℃);
  3. Deseed the watermelon and cut it into small cubes. Return them to the refrigerator;
  4. Rinse well, grate the zest, and juice the lemon and lime;
  5. Strain the stevia syrup, add the grated zest to it, cover, and set aside for 15-20 minutes;
  6. Strain the stevia syrup again and mix with the squeezed juice;
  7. Blend the watermelon cubes with the syrup until smooth;
  8. Serve with ice or chill in the refrigerator until serving;
  9. Stir just before serving.

Notes

Alternatively:

  • Replace the watermelon with a juicy melon or cantaloupe.
