Ingredients
250 ml water;
1 tbsp dried stevia leaves;
1 handful coarsely chopped fresh mint leaves (50 g);
1 lemon;
2 limes;
1 medium watermelon (2-3 kg), seedless;
Ice cubes.
Directions
Cool the watermelon for a few hours in the refrigerator;
In a small saucepan, combine water and stevia and bring to a boil, remove from heat, cover, and set aside for 10-15 minutes (to cool to 70-80℃);
Deseed the watermelon and cut it into small cubes. Return them to the refrigerator;
Rinse well, grate the zest, and juice the lemon and lime;
Strain the stevia syrup, add the grated zest to it, cover, and set aside for 15-20 minutes;
Strain the stevia syrup again and mix with the squeezed juice;
Blend the watermelon cubes with the syrup until smooth;
Serve with ice or chill in the refrigerator until serving;
Stir just before serving.
Notes
Alternatively:
Replace the watermelon with a juicy melon or cantaloupe.
