Prep Notes

  1. Preferrably soak the products in this recipe so that they are easier to blend and don't cause discomfort when consumed.
  2. The water added during blending gives volume, but watch out not to overdo it. First, add part of it, blend the mix, and keep adding until you like the result.

Ingredients

  • 1 cup white beans, presoaked;
  • 1 cup raw cashew, presoaked;
  • 1-2 tsp Dijon mustard;
  • 2 tbsp. lemon juice (from 1 lemon);
  • 1-2 tbsp. white vinegar;
  • 100-150 ml of water;
  • 2 tsp salt;baking soda

Directions

  1. Place beans in 1 l of cold water with 1 tsp. baking soda and let them boil for 5 minutes while stirring to contain the foam forming;
  2. Drain the water and wash the beans;
  3. Repeat steps 1 and 2 if the beans are very old, or just if you like to avoid them cause you gasses;
  4. Place the beans in 1 l of cold water and bring them to boil;
  5. Then reduce the heat, cover and simmer for 45-60 minutes (until soft);
  6. Drain the beans and cashews and put them in a food processor along with mustard, lemon juice, vinegar, salt and water;
  7. Process them until you get the desired texture. You may experiment with the amount of water as mentioned above;
  8. Store up to 5 days in the fridge or freeze for up to 2 months in freezer.

Notes

Tips and alternatives:

  1. Always cook beans placing them in cold water. Thus, you prevent from turning them into mash/paste prematurely;
  2. For this recipe you may alson use canned beans. Rinse them well.
