Ingredients

  • 100 g butter (cow or coconut);
  • 250 g of sugar;
  • 8 eggs (8 tbsp of chia in ¼ l of boiling water for 5 minutes);
  • Lemon peel/essence;
  • 300 g flour;
  • 4 large apples;
  • 250 g of sour cream (vegetable cream or soy yogurt + 3 tbsp. olive oil);
  • 1 tsp cinnamon;
  • ½ tsp. ground cloves

Directions

  1. In a deep bowl, blend softened butter, lemon essence, 5 eggs, and 200 g of sugar with a mixer until smooth;
  2. Add the flour to it and blend until a smooth mixture;
  3. Pour into a rectangular pan (12" x 16") on baking paper and spread the mixture with a spatula;
  4. Core 4 apples, cut them into thin slices (⅛"), and arrange them evenly over the mixture in the pan;
  5. Preheat the oven to 360℉
  6. In a bowl blend the sour cream, 3 eggs, sugar, cloves, and cinnamon with a mixer until smooth, and spread with a spoon over the apples;
  7. Bake in a preheated oven for 35-40 minutes;
  8. When cool, cut into squares or rectangles and serve.
