Korean Carrot Salad

Ingredients

  • 1 lb. carrots (5 carrots);
  • 1 tsp salt;
  • ¼ red onion;
  • 2 tbsp apple cider vinegar;
  • 1 tbsp chile powder;
  • 1 tsp salt;
  • 1 tbsp soy sauce;
  • ¼ cup olive oil;
  • 2-3 garlic cloves;
  • black pepper to taste;
  • 1-2 tbsp toasted sesame seeds.

Directions

  1. Julienne carrots and toss them with 1 tsp salt;
  2. Slice finely the onion and place it in a bowl of ice-cold water to let it soak for 10-15 minutes. Thus, we leach out some of its "bite." Then, completely drain them from the water and add to the bowl with the carrots;
  3. Combine vinegar, chile, soy sauce, olive oil, minced garlic, and black pepper in a small bowl;
  4. Pour dressing over carrots and onions. Toss carrots and onions with the sauce in a bowl. Taste and adjust seasoning if needed;
  5. Serve the salad in a shallow serving bowl, garnished with toasted sesame seeds.

Notes

  • Omit red onions;
  • Add chopped fresh spring cabbage;
  • Substitute apple cider vinegar with lemon juice;
  • Add 1 tsp ground coriander.
