Guacamole

Cut the avocado in half as you go around the circumference of the stone with the knife. Turn the two halves in opposite directions to separate them. Punch the knife in the middle of the stone with a saber blow and twist it in one direction to separate it free from the pulp. Scoop the pulp with a spoon.

Ingredients

  • 3 avocados;
  • 1 small tomato;
  • 1 green bell pepper;
  • ½ lemon, juiced;
  • cilantro;
  • 1 small onion (optional);
  • 4 tbsp. olive oil;
  • ½ tsp salt

Directions

  1. Cut each avocado in half, remove the stone and scoop the pulp out;
  2. Chop all produce into small pieces;
  3. Season with olive oil and salt;
  4. Combine well or mash with a fork;
  5. Pour the mixture and serve.

Notes

Options:

  • Increase the amount of olive oil if the avocado is not ripe enough. This gives you a lasting product.
  • The use of a blender is possible if mashing with a fork would be too much of an effort;
  • Add roasted garlic for unsurpassed flavor;
  • Use parsley instead of cilantro.
