Ingredients
600 g salmon fillet;
4 tbsp. olive oil;
4 tbsp. lemon juice;
½ tsp salt;
1 handful of bay leaves.
Directions
Slice the fillet into portions;
Lightly rub the salt and the spices;
Sprinkle with lemon juice and olive oil;
Wrap well and leave to marinate for at least a few hours, preferably overnight;
Preheat grill (oven) well to 400-420℉ and roast for 10-12 minutes;
Serve with mashed potatoes.
Notes
Other good spices to use with salmon are:
pepper (black or white);
paprika (sweet or hot);
thyme;
dill;
basil;
rosemary
