Ghee, purified butter

Quality fats for vegans can be quite expensive. Ghee is an easy homemade solution to this, the process separates the cow's butter (frozen suspension) into pure butter, milk proteins, and water. Ghee is suitable for direct consumption and cooking. It's not as smooth as cow's butter but has a superb caramel flavor.

Ingredients

500 grams of unsalted organic cow butter

Directions

  • Cut the butter into large cubes;
  • Melt the cubes over medium heat in a saucepan;
  • When it starts to foam, reduce the heat to low;
  • Skim off the foam with a tablespoon, without stirring, until it stops foaming and begins to turn golden;
  • Soon after, the butter begins to foam again, and when you skim off the foam, it is ready;
  • Allow the butter to cool for a few minutes, then strain it through a fine sieve with cheesecloth into a glass container/jar;
  • Store at room temperature or in the refrigerator for longer periods.
