Ingredients
- 1 kg ripe tomatoes;
- ½ cucumber, peeled and seedless;
- 1 red bell pepper;
- ½ small red onion;
- 2 small garlic cloves;
- 4 tbsp. olive oil;
- 2 tbsp. vinegar;
- 1 tsp fine salt;
- ½ tsp pepper;
- ½ tsp ground cumin.
Directions
- Rinse and clean all vegetables;
- Put all the ingredients in a blender and process for at least 1 minute or until smooth;
- Refrigerate well (at least 2 hours);
- Serve cold, garnished with chopped vegetables, and drizzle some olive oil and some fresh herbs.
