Ingredients

  • 1 kg ripe tomatoes;
  • ½ cucumber, peeled and seedless;
  • 1 red bell pepper;
  • ½ small red onion;
  • 2 small garlic cloves;
  • 4 tbsp. olive oil;
  • 2 tbsp. vinegar;
  • 1 tsp fine salt;
  • ½ tsp pepper;
  • ½ tsp ground cumin.

Directions

  1. Rinse and clean all vegetables;
  2. Put all the ingredients in a blender and process for at least 1 minute or until smooth;
  3. Refrigerate well (at least 2 hours);
  4. Serve cold, garnished with chopped vegetables, and drizzle some olive oil and some fresh herbs.
