Ingredients

  • 4 dried bay leaf;
  • 2 whole cinnamon sticks;
  • 1 tsp whole cloves;
  • 20 whole black cardamom pods;
  • 1 tbsp whole black peppercorns;
  • 2 tbsp whole cumin seeds;
  • 4 tbsp whole coriander seeds;
  • ½ whole nutmeg pod.

Directions

  1. Place the spices to a medium skillet;
  2. Toast over medium heat for 1–2 minutes, until fragrant, but not burnt;
  3. Transfer the toasted spices to a plate and let cool;
  4. Transfer the spices to an electric spice grinder or mortar and pestle and grind into a fine powder;
  5. Keep your garam masala in an airtight container in a cool, dark place for several months.
