Rinse and cut the prunes in half, removing the stones;
Preheat the oven to high;
Add sugar to the softened coconut oil and mix well until smooth;
Add the eggs one by one, the vanilla, and the salt, continuing stirring;
Sift the flour with the baking powder into the mixture while stirring to avoid lumps;
Pour the mixture into a greased baking pan and arrange the plums on top;
Sprinkle some sugar into the stone pits;
Bake at 370℉ for 40-50 minutes or until a dry toothpick;
Serve hot or cold and garnish as desired.
Notes
The use of a mixer is a matter of personal choice, but not required. The flour sieve is recommended because it adds volume and the dessert becomes softer and fluffier;
An option for vegetarians is the use of 3 eggs (instead of flaxseed and water) and milk butter (instead of coconut oil).
