Gâteau Aux Pruneaux

Ingredients

  • 750 g prunes;
  • 200 g coconut oil;
  • 200 g flour;
  • 250 g + 2 tbsp. sugar;
  • 3 tbsp. ground flaxseed;
  • 9 tbsp. water;
  • pinch of salt;
  • 1 baking powder;
  • 1 vanilla

Directions

  1. Rinse and cut the prunes in half, removing the stones;
  2. Preheat the oven to high;
  3. Add sugar to the softened coconut oil and mix well until smooth;
  4. Add the eggs one by one, the vanilla, and the salt, continuing stirring;
  5. Sift the flour with the baking powder into the mixture while stirring to avoid lumps;
  6. Pour the mixture into a greased baking pan and arrange the plums on top;
  7. Sprinkle some sugar into the stone pits;
  8. Bake at 370℉ for 40-50 minutes or until a dry toothpick;
  9. Serve hot or cold and garnish as desired.

Notes

  1. The use of a mixer is a matter of personal choice, but not required. The flour sieve is recommended because it adds volume and the dessert becomes softer and fluffier;
  2. An option for vegetarians is the use of 3 eggs (instead of flaxseed and water) and milk butter (instead of coconut oil).
