Ingredients
- 100 g Chia seeds;
- 400 ml whole coconut milk;
- 250-300 ml water;
- 3-4 tbsp date treacle;
- 1 cup Strawberries and/or cherries (other seasonal fruits);
- 3 drops of peppermint oil and/or few peppermint leaves
Directions
- Pour the coconut milk into a 1-liter jar with a lid;
- Add the treacle and peppermint oil to the milk and stir well until smooth;
- Add the chia eeds and covers;
- Refrigerate for 3 hours in a jar with a closed lid;
- Use a fork to fluff the pudding and add water until you reach the texture desired;
- Serve garnished with fresh fruits;
- You may store for 3 days in a refrigerator
Notes
- Use raw honew or other natural sweetener instead of the date treacle;
- The peppermint oil is to be used with caution
