Fruit Chia pudding

Ingredients

  • 100 g Chia seeds;
  • 400 ml whole coconut milk;
  • 250-300 ml water;
  • 3-4 tbsp date treacle;
  • 1 cup Strawberries and/or cherries (other seasonal fruits);
  • 3 drops of peppermint oil and/or few peppermint leaves

Directions

  1. Pour the coconut milk into a 1-liter jar with a lid;
  2. Add the treacle and peppermint oil to the milk and stir well until smooth;
  3. Add the chia eeds and covers;
  4. Refrigerate for 3 hours in a jar with a closed lid;
  5. Use a fork to fluff the pudding and add water until you reach the texture desired;
  6. Serve garnished with fresh fruits;
  7. You may store for 3 days in a refrigerator

Notes

  • Use raw honew or other natural sweetener instead of the date treacle;
  • The peppermint oil is to be used with caution
