Ingredients
- 1 kg cucumbers;
- 200 g green salted pitted olives;
- 4 tbsp. olive oil;
- 250 g sour cream;
- 1 tsp honey;
- 1 clove of garlic;
- ¼ tsp. ground black pepper;
- 3 tbsp. lemon juice;
- 1 handful of basil leaves;
- Salt (if olives are not salty enough);
- 1-2 hard-boiled eggs;
- Sun-dried tomatoes.
Directions
- Rinse and chop the cucumbers and basil leaves into large slices;
- In a food processor place (if necessary in parts) sour cream, garlic, olive oil, lemon juice, honey, spices, olives and the chopped products;
- Process them until smooth and add salt to taste if the olives are not salty enough;
- Refrigerate well (at least for 2 hours) and serve garnished with egg crumbs, olive oil and sun-dried tomatoes on top.
