Crêpes (French pancakes)

On February 2, the French celebrate the Candlemas, the day on which Virgin Mary presented her son, Jesus (40 days after Christmas). For this, they make these wonderful pancakes.

Ingredients

  • 1 cup flour (225 g);
  • 3 eggs;
  • 2 cups fresh milk (500 ml);
  • 2 tbsp. sugar (25 g);
  • pinch of salt;
  • 2 tbsp. butter (50 g);
  • 2 tbsp. rum (50 ml);
  • 1 vanilla;
  • 1-2 tbsp. sunflower oil.

Directions

  1. Sift the flour into a deep bowl and form a well in the middle;
  2. Add sugar, salt and eggs to the well and whisk them, without incorporating much from the flour;
  3. Only then begin to add little by little milk, mixing gradually with the flour;
  4. After adding all the milk, make sure there are no lumps of flour left on the bowl;
  5. Melt the butter in a small pan over medium heat and allow it to darken slightly;
  6. Add the liquid butter to the mixture and whisk well (30 sec. - 1 minute);
  7. Add the rum to the mixture and whisk well again;
  8. Cover the bowl with a towel and let the mixture rest for 1 hour;
  9. Grease a well-heated pan with sunflower oil and remove any excess;
  10. With a ladle, pour some mixture into the pan and with a turning motion allow the mixture to spread the pan evenly;
  11. Use spatula to detach the sides form the pan and once one side is baked, flip on the other.
  12. Serve in one of the following ways:
  • tap halved lemon and sprinkle some sugar;
  • spread melted butter and sprinkle some sugar;
  • spread raspberry jam;
  • whipped cream and chocolate spread;
  • whipped cream and raspberry jam.

Notes

Vegan variations:

  1. Replace cow's milk with your favorite plant milk;
  2. Replace all fats with coconut oil;
  3. Replace the eggs with ground flaxseed or chia soaked in water.
