Cherry Brittany Pudding

Ingredients

For the batter:

  • 350 g old bread or similar;
  • 500 ml warm milk;
  • 150 g of sugar;
  • 125 g of almond flour;
  • 3 eggs;
  • 500 g cherries (fresh or frozen);

For the topping:

  • ½ tsp. ground cinnamon;
  • 3 tbsp. sugar;
  • 2 tbsp. breadcrumbs;
  • 75 g of butter, cold and cubed.

Directions

  1. Preheat your oven to 200℃;
  2. Crumble the bread into a large bowl. Cover with the warm milk and let soak for 5 minutes. Using a whisk, mix until you get the consistency of a smooth paste;
  3. Whisk in the sugar, almond flour, and eggs. Fold in the cherries;
  4. Pour the batter in a greased baking dish, and smooth out the top with a spoon;
  5. Mx with your fingers the ground cinnamon, sugar, bread crumbs and butter until you get a crumbly consistency. Sprinkle the topping evenly onto the batter;
  6. Bake until golden (40-45 minutes);
  7. Let cool for at least 10 minutes before serving.

Notes

  • Opt out the fresh milk for almond milk or another favorite nut if you are fasting;
  • Opt out the cow butter for coconut if you're fasting.
