Black Currant Syrup

This recipe is suitable to prepare syrup from any fruit available.

Ingredients

  • 1 kg of black currant;
  • ½ kg of sugar;
  • 3 l of water

Directions

  1. Wash the fruits and place them in a deep pot. Add the water and bring to the boil;
  2. Reduce heat and let it simmer for about 5 minutes;
  3. Using a masher, mash the fruits well while in the pot;
  4. Let them  simmer for another 5 minutes and remove from the heat;
  5. Strain the whole mixture through a fine mesh to get a clear syrup;
  6. In a clean pot, bring the syrup to a boil again;
  7. Add sugar and stir so that it does not stick to the bottom;
  8. Remove from the heat after 15 minutes and bottle the syrup while hot to set;
  9. Drink diluted to taste with plain/gas water or use as a topping to your desserts;
  10. Store in a cool, dark place.
