This recipe is suitable to prepare syrup from any fruit available.

Ingredients
1 kg of black currant;
½ kg of sugar;
3 l of water
Directions
Wash the fruits and place them in a deep pot. Add the water and bring to the boil;
Reduce heat and let it simmer for about 5 minutes;
Using a masher, mash the fruits well while in the pot;
Let them simmer for another 5 minutes and remove from the heat;
Strain the whole mixture through a fine mesh to get a clear syrup;
In a clean pot, bring the syrup to a boil again;
Add sugar and stir so that it does not stick to the bottom;
Remove from the heat after 15 minutes and bottle the syrup while hot to set;
Drink diluted to taste with plain/gas water or use as a topping to your desserts;
Store in a cool, dark place.
