Banana Bread

Ingredients

  • 3 bananas
  • 1½ cup flour;
  • 1 tsp baking soda;
  • ⅔ cup sugar;
  • pinch os salt;
  • 1 tbsp. flax seeds, grounded;
  • 3 tbsp. water;
  • 150 g coconut oil (melted or soft);
  • 1 vanilla pod (optional)

Directions

  1. Preheat the oven to 350℉;
  2. Mash the bananas, melt the butter (in a water bath), sift the flour and prepare an "egg" from the flaxseed and water;
  3. Mix the dry and liquid ingredients separately and finally knead them into a nice dough;
  4. Bake for 1 hour in a preheated oven

Notes

Alternatively:

  • Instead of flaxseed you could use 1 egg;
  • Instead of coconut oil you could use butter or olive oil.
