Baked Veggie Frittata

Ingredients

  • 2 potatoes, sliced into strips;
  • 1 carrot, sliced into strips;
  • 1 red onion, chopped;
  • 1 bell pepper, diced;
  • 4 eggs;
  • 100 g flour;
  • 100 ml milk;
  • Salt and pepper to taste;
  • Chopped parsley;
  • 150 g mozzarella cheese;
  • 2 tsp extra virgin olive oil

Directions

  1. Sauté the chopped red onion in oil in a pan;
  2. Add the carrots and bell pepper, and cook for about 5 minutes;
  3. In a large bowl, mix the potatoes (previously rinsed and drained) with eggs, flour, milk, salt, pepper, and parsley to make a batter;
  4. Add the sautéed veggies to the batter and mix well;
  5. Pour the mixture into a baking dish and bake in a preheated oven at 170°C for 12 minutes;
  6. Top with mozzarella cheese and broil until golden brown;
  7. Cut the frittata as desired once baked and serve with Special Mayo-Ketchup Sauce.
