Ingredients
- 2 potatoes, sliced into strips;
- 1 carrot, sliced into strips;
- 1 red onion, chopped;
- 1 bell pepper, diced;
- 4 eggs;
- 100 g flour;
- 100 ml milk;
- Salt and pepper to taste;
- Chopped parsley;
- 150 g mozzarella cheese;
- 2 tsp extra virgin olive oil
Directions
- Sauté the chopped red onion in oil in a pan;
- Add the carrots and bell pepper, and cook for about 5 minutes;
- In a large bowl, mix the potatoes (previously rinsed and drained) with eggs, flour, milk, salt, pepper, and parsley to make a batter;
- Add the sautéed veggies to the batter and mix well;
- Pour the mixture into a baking dish and bake in a preheated oven at 170°C for 12 minutes;
- Top with mozzarella cheese and broil until golden brown;
- Cut the frittata as desired once baked and serve with Special Mayo-Ketchup Sauce.
